Arriving as the newest slice of happiness to come out of TrimTab Brewing’s Cellar Reserve Series, Cake Therapy is an Imperial Stout “crafted with double chocolate, cinnamon and vanilla icing.”  Coming in at 10% ABV, the decadently sweet Cake Therapy is sure to delight “16 sinfully delicious ounces” at a time.

Cake Therapy will officially release in the Tasting Gallery at TrimTab Brewing on December 6. This Limited Release offering will be available in 4-packs of 16 oz. cans.  There is no word at this time as to whether Cake Therapy will see distribution, but past Cellar Reserve Series offerings have turned up at select craft beer-focused establishments located within TrimTab Brewing’s distribution footprint.  Prost!

TrimTab Brewing Treats Fans to Crème de la Crème Brûlée Imperial Stout

TrimTablogoTrimTab Brewing (Birmingham, Alabama) has officially announced that it will hold a Limited Can Release for Crème de la Crème Brûlée Imperial Stout on Friday, November 15.

Surfacing as the latest offering to come out of TrimTab Brewing’s Cellar Reserve Series, Crème de la Crème Brûlée is a crème brûlée-inspired Imperial Stout “crafted with vanilla beans, molasses and crème brûlée coffee.”  Weighing in at a sizable 8.7% ABV, Crème de la Crème Brûlée promises to be “16 ounces of decadence.”

Crème de la Crème Brûlée will officially release in the Tasting Gallery at TrimTab Brewing on November 15. This Limited Release offering will be available in 4-packs of 16 oz. cans.  At this time, there is no word on whether Crème de la Crème Brûlée will see distribution.  Prost!

Tasting Notes: Coco Flamingo DIPA from Wild Leap Brew Co. & TrimTab Brewing

CocoFlamingoPourFor this installment of Tasting Notes, a few cans of Coco Flamingo Double IPA from Wild Leap Brew Co. (LaGrange, Georgia) and TrimTab Brewing (Birmingham, Alabama) provide us with a tropical escape from a Tuesday afternoon in the office.

Released at the tail end of June as Wild Leap Brew Co.’s first ever collaboration project and the first beer TrimTab Brewing has brewed in collaboration with a Georgia brewery, Coco Flamingo is a Hazy Double India Pale Ale made with “a blend of tangerine, key lime, and toasted coconut.” Tropical in nature, Coco Flamingo (8% ABV) has “a unique flavor profile” that will most assuredly “take you straight to the islands!”

Coco Flamingo was introduced during the last week of June 2019 and it is possible that a few cans or kegs could still be floating around out there.  Look for this Limited Release to possibly be available in 12 oz. cans and on draft at select craft beer-focused establishments in Alabama, Georgia and Tennessee.

Now that all the background data has been properly covered, let’s pour up some island vibes and get into these Tasting Notes!

Tasting Notes for Coco Flamingo Double IPA from Wild Leap Brew Co. & TrimTab Brewing

Appearance: A steady pour from a 12 oz. can produces a Double IPA that is a deep, caramelized orange in color and capped with a perfect finger of slightly off-white foam.  When held to direct light, those caramel tones soften to create more of a dark orange-juice-like appearance.  This beer is quite hazy (bordering on murky), leaving it mostly opaque.  Head retention is decent, casually falling to a thin ring that leaves spotty lacing at times.

Aroma:  Notes of sweet tangerine, citrus oils and cedar present themselves as soon as the can is opened.  A distinct lime presence (both juice and zest) then surfaces to further establish the citrus profile while a sweet fruit punch character adds some contrast.  A grace of toasted coconut rests in the background, adding to the beer’s tropical character while providing a bit more sweetness.

Taste:  Tangerine leads the way here as well and is joined by notes of sweet orange juice, mixed berries, pineapple and lime zest.  A beautiful cedar quality then works its way in to provide a citrus-laced woody note.  A touch of vanilla (which we believe is hop sourced) swirls about with the fruitier tones, but that floral sweetness is seemingly only here to provide balance and draw a bit of attention to the toasty malt backbone.  Coconut turns up near the finish, but it translates more like an earthy, semi-sweet coconut water rather than just candied, toasted coconut.  The balance here is on point.

Mouthfeel:  On the full side of medium in body with a mild carbonation, this beer is soft and silky on the palate.  It does lean to the juicy/sweet side at times, but the hops kick in with some bright lime notes and sharp cedar tones to push things back into the area of balance. The 8% ABV is unbelievably tame, and that keeps drinkability super high.  The aftertaste reads as a sip of coconut water with a twist of tangerine.

Final Thoughts:  On paper, a “Coconut, Tangerine & Lime DIPA” sounds like it could be either one of two things:

  1. A mess
  2. A heavenly concoction that will leave us wondering why there are not more in existence

Luckily, Wild Leap and TrimTab put their heads together and came up with a way to ensure that the second option would unquestionably apply to Coco Flamingo.  It appears they pulled this off by having a deft hand with the added toasted coconut and letting the Sabro and Lotus hops provide the majority of the coconut and vanilla notes. This (along with that surprisingly clutch note of cedar) provides balance and allows the coconut notes to translate as natural (instead of artificial or sun-tan-lotion-like).  Sure, this means that the overall experience reads more as an exotic Double IPA rather than a super sweet tropical cocktail, but we all showed up here for a Double IPA anyway.  All in all, Coco Flamingo is an incredibly well-composed beer that is a beautiful pairing for any summer day.  Prost!

TrimTab Brewing Brings the Beach Vibes with Limited Release of Mango Colada

Here to keep TrimTab Brewing’s Beach Club Series of “tiki and cocktail influenced sour ales” rolling through summer, Mango Colada is an Imperial Sour Ale that has been “fermented with [a] fruity expressive yeast . . . and conditioned . . . on hundreds of pounds of toasted coconut, fresh citrusy key lime purée, and tropical soft mango.”  Coming in at a “deceivingly smooth and drinkable” 8% ABV, Mango Colada is a “spirit of quality” that will surely inspire you to “create a Summer you love.”

Mango Colada will debut in the Tasting Gallery at TrimTab Brewing on July 12 and distribution is scheduled to follow shortly after the on-site release.  You can expect to find this Limited Release available in 4-packs of 16 oz. cans at select craft beer-friendly retailers located in Alabama and Georgia.  Prost!

Arriving as Wild Leap Brew Co.’s first ever collaboration project and the first beer TrimTab Brewing has brewed in collaboration with a Georgia brewery, Coco Flamingo is a Hazy Double India Pale Ale made with “a blend of tangerine, key lime, and toasted coconut.” Tropical in nature, Coco Flamingo (8% ABV) has “a unique flavor profile” that will most assuredly “take you straight to the islands!”

“Alongside the fresh fruit elements, the Sabro and Lotus hops embody the strong toasted coconut and orange, fruit punch flavor profiles in this beer,” explains Luke Garner, Head Brewer of TrimTab. “Without being sweet, it is the perfect marriage of a double IPA and a pina colada.”

TrimTab Brewing Sets Release Date for Southern Sphere Hazy Double IPA

TrimTabSouthernSphereposterTrimTab Brewing (Birmingham, Alabama) has officially announced that it will begin the Limited Release of Light Visions: Southern Sphere, a Southern Hemisphere Double Dry-Hopped Hazy Double IPA, at noon on Friday, April 26.

Arriving as the newest installment in TrimTab’s Light Visions Collection of small-batch hazy and New England IPAs, Southern Sphere is a New England-style India Pale Ale that is supported by “a grain bill [of] clean Pilsner malt, as many fluffy flaked oats as possible and just a touch of lactose to produce the ideal mouthfeel for this style.” The beer was then hit with a “fruit-forward yeast strain” and double dry-hopped with 100% New Zealand hops – Wakatu, Pacifica and Nelson Sauvin.  Coming in at 7.5% ABV, Southern Sphere promises to supply its drinker with a “REAL smooth” experience filled with “overwhelming flavor notes and aromas of citrusy tangerine pulp, apricot marmalade, HUGE sauvignon blanc grape vibes and kiwi like resin, all rounded out with lower bitterness and a creamy mouthfeel.”

Arriving as the latest installment in the brewery’s Light Visions Collection of small batch New England-style IPAs and Double IPAs, Helix Rising is a Hazy Double IPA that starts with “a complex grain bill consisting of clean Pilsner, copious amounts of sticky oats and a touch of flaked wheat to really tie the body . . . together.”  To nail down the style’s juicy character, TrimTab’s brewers fermented Helix Rising with “a fruity expressive yeast and then pushed [it] to the limit with extreme Double Dry hop additions of fresh Chinook, Zythos, Simcoe and Simcoe Lupulin Powder.”  The complex recipe and hop schedule yield a deceivingly drinkable Helix Rising (8% ABV) “[overflowing] with flavors and aromas of freshly juiced pineapple, honeydew melon, fruit cocktail and apricot purée, followed with just the right amount of sticky resin bitterness.”

TrimTab Brewing Schedules Release of Breakfast Hero Imperial Doughnut Stout

To bring a legit “Pastry Stout” to The Magic City, the brewers at TrimTab lay the foundation for Breakfast Hero by adding “loads of delicious doughnuts” from HERO Doughnuts to a mash already packed with “multiple base malts, chocolate malt, [and] plenty of oats.” The level of decadent indulgence just goes up from there as they then max out their “fermentor . . . with an extremely generous amount of Vermont maple syrup, a pound of Madagascar vanilla beans, and Freshly Roasted Brazilian coffee beans from [their] pals down the street at SEEDS Coffee Co. to tie this imperial stout together in perfect breakfast harmony.”  Weighing in at a sizable 8.5% ABV, Breakfast Hero comes together to offer “notes of syrupy covered pancakes, melty bakers chocolate, subtle vanilla cream, and roasty hazelnut coffee.”

Breakfast Hero Imperial Doughnut Stout will officially release at 3 p.m. on June 8 in the Tasting Gallery at TrimTab Brewing.  This Limited Release will be available in 16 oz. cans and will most assuredly disappear with a quickness. TrimTab Brewing Plans Small Batch Can Release of Chocolate Churro Milk Stout

Established expressly for R&D reasons and to gain feedback from their fans, TrimTab Brewing’s Gallery Series is a small batch series comprised of the brewery’s most artful and experimental recipes.  The first Stout to hit this series of very limited releases is Gallery Series #008 – Chocolate Churro Milk Stout, a decadent dessert beer brewed with chocolate malts, cinnamon sticks and pure liquid cacao.  Although big on flavor, Chocolate Churro Milk Stout clocks in at a reasonable 6.9% ABV.

TrimTab Brewing to Hold Limited Canned Release of Fox&Furnace and Tesserae DIPA

emblem-bwOn Friday, October 13 at 5 p.m., TrimTab Brewing (Birmingham, Alabama) will begin the limited release of Fox&Furnace English IPA and Tesserae Double IPA in 12 oz. cans.

The folks at TrimTab Brewing recently initiated a new expansion of their operation, and that will now make it possible for Birmingham’s beer-loving masses to get their hands on a few new packaged offerings from the brewery.  One of the first waves of these new canned releases will include the following two TrimTab favorites:

  • Fox&Furnace English IPA“The Red Fox is an official animal of Birmingham, England. It’s cunning, complex, and smooth.  Furnaces have long been representative of Birmingham, Alabama – The center of Southern Steel. The name Fox&Furnace connects the two Birminghams and appropriately describes this English style beer brewed in our Steel City.
    This English IPA is light in color, has a complex, almost toffee-like aroma with hints of toasted caramel. It has light citrus notes balanced with a variety of earthy and herbal characteristics. It is both rich and light.”  ABV – 5.6%  IBUs – 61
  • Tesserae Double IPA – “The name refers to the Mosaic Hops used in the beer. A “tesserae” is a small block of stone, tile, glass, or other material used in the construction of a mosaic.
